Camp Potatoes
The Road Trippers, a barbecue team whose members hail from Austin, Fresno, Fairchild, Houston, and Round Top, contributed this tasty potato dish. These folks ought to know what goes well with barbecue: They’re won awards for their pork, beef, and sausage at cook-offs all over the state.
3 pounds potatoes
1 large onion, sliced
1/2 pound bacon strips
2 cups grated cheddar cheese
Butter to taste
Italian dressing to taste
Wash and thinly slice potatoes (to not peel). Layer first 4 ingredients in order in an oven-safe dish. Top with pats of butter. Pour Italian dressing over mixture to moisten all ingredients. Put in a smoker and cook until potatoes are tender.
