No, armadillos don’t lay eggs. Still, this makes a great name for a Texas favorite. Armadillo eggs can be served as a spicy side dish or appetizer–and this easy armadillo eggs recipe only takes minutes to prepare.
Southfork Ranch’s Armadillo Eggs
Years ago this recipe was contributed to our Texas Barbecue cookbook by the Southfork Ranch, where exterior shots for the “Dallas” television series were filmed. You don’t get much more Texan than that!
Today you can tour Southfork, located about half an hour north of Dallas near the town of Parker. Tours include the “Ewing” house as well as the “Dallas Legends” exhibit with the gun that shot J.R., Lucy’s wedding dress, and other props from the popular show. Jock Ewing’s original 1978 Lincoln Continental still remembers the patriarch of the family while Miss Ellie’s Deli recalls its matriarch.
The mansion is also often booked for weddings and special events with chuckwagon tours of the ranch, transporting attendees from the mansion to a dinner camp, accompanied by singing cowboys.
Ingredients
2 pounds pork sausage
3/4 pound sharp cheddar cheese, cut into 1/2-inch cubes
6 jalapeno peppers, halved and seeds removed, cut into 1/2-inch pieces
Directions
Preheat oven to 250 degrees F.
Soften sausage in a 250 degree F oven for 2 to 3 minutes (do not cook).
Remove softened sausage from oven then raise temperature to 350 degrees F and allow oven to preheat to higher temperature.
Place cheese cubes into jalapeno pieces (1 cube to each 1/2-inch slice of pepper).
Roll or pat out sausage into 4-inch circles, approximately 1/4-inch thick. Wrap sausage around pepper-and-cheese bundle and shape to look like an egg.
Repeat with remaining ingredients.
Bake in a 350-degree oven for 12 to 15 minutes.
