Easy Texas Quiche Recipe

Are you looking for an easy Texas breakfast dish that is simple to prepare and be used for a whole week of morning meals? Look no further a Texas Quiche, a basic recipe to which you can add your own favorites for a breakfast as spicy or mild as you like.

Easy Texas Quiche Recipe

The basic recipe begins with just a few ingredients:

  • 2 frozen pie crusts (this are EASY Texas recipes, after all–but feel free to make your own homemade pie crust, too!)
  • 1 pound breakfast sausage
  • eggs
  • milk or half and half
  • shredded cheese

Start by preheating your oven to 350 degrees F.

I like to pop the frozen pie crusts in the heated oven for 5-10 minutes just to thaw them out and get them past the doughy stage before pouring the egg mixture in. Put the pie plates on a cookie sheet to make them easier to get in and out of the oven once they’re full!

Next up, brown the sausage!

I used a regular breakfast sausage but feel free to heat things up with a spicy blend. Whichever sausage you choose, you’ll want to brown it thoroughly, breaking it into crumbles, then remove the meat from the skillet and drain on paper towels.

While the meat is draining, whip up the egg mixture. I like plenty of black pepper in mine but cayenne also makes a great dish.

Use a whisk or a fork to whip the eggs then add milk (for fewer calories), half and half or heavy cream.

Instead of adding the sausage to the egg mixture, divide the sausage into the two pie plates, top with half the cheese (divided between the two plates) and THEN pour the egg mixture. This will prevent the sausage from sinking to the bottom of the bowl as you pour and let you more evenly distribute the sausage between your two pies.

Once the egg mixture has been added, top the two pies with the remaining cheese–then into the oven they go!

Bake the quiche for about 50-55 minutes then remove from the oven and cool on a wire rack for about 10 minutes or so, allowing everything to set before you slice.

Want to make some substitutions?

This quiche recipe is a great base for making ingredient substitutions including any of the following to your liking:

  • a half cup of chopped onions
  • a half cup of picante sauce or pico de gallo (add 10 minutes or so extra baking time)
  • crumbled cooked bacon instead of sausage
  • cheese of your choice. I used Monterey Jack; cheddar (mild or sharp) works great as does Pepper Jack for some extra zing.

Simplify your breakfast routine and make two quiche at the same time!

Ingredients

  • 1 pound breakfast sausage
  • 2 cups shredded cheese
  • 6 eggs, beaten
  • 1 1/4 cup milk
  • 1/4 tablespoon black pepper, ground
  • 2 9" deep dish pie crusts

Instructions

  1. Preheat oven to 350 degrees F.
  2. Brown sausage completely then remove from skillet and drain on paper towels.
  3. In a large bowl, mix eggs, milk and pepper.
  4. Cook pie crusts in heated oven for 5-8 minutes then remove.
  5. Place pie crusts on a large baking pan to make transfer to the oven easier when filled.
  6. Add 1/2 of sausage to each pie crust. Spread sausage out evenly across the bottom of the pie.
  7. Add 1/4 of shredded cheese to each quiche, reserving the second half of the cheese for the topping.
  8. Pour 1/2 of milk and egg mixture into each quiche.
  9. Add remaining cheese on top of each quiche, spreading evenly.
  10. Place quiche on center rack of oven.
  11. Bake for about 50 minutes or until a toothpick inserted into the center of each quiche comes out clean.
  12. Remove quiche from oven and cool on wire rack for at least 10 minutes before slicing.
  13. Quiche can be covered with foil and refrigerated for three days.
