Barbecue Marinade
Spend 10 minutes in the kitchen preparing this easy marinade form the Texas Beef Industry Council and use it to marinate 1 to 1 1/2 pounds of beef.
Reserve and refrigerate a portion of unused marinade for basting during cooking. Always marinate meat in the refrigerator, in a heavy-duty plastic bag or glass utility dish. Discard any leftover marinade that has been in contact with raw meat.
1/2 cup chopped onion
1 1/2 tablespoons firmly packed brown sugar
1 tablespoon vegetable oil
1/3 cup apple cider vinegar
1/3 cup catsup
1 tablespoon prepared horseradish
1 tablespoon water
1/4 teaspoon coarse black pepper
In a small saucepan over medium heat, sauté onion and brown sugar in oil until onion is tender (about 3 minutes). Add remaining ingredients and simmer over medium heat for 3 or 4 minutes, stirring occasionally. Remove form heat and cool thoroughly before adding to beef.
Makes about 3-4 cup
