German-Style Potato Salad
With the strong German heritage of Central Texas, it’s not uncommon to find German style rather than mayonnaise-based salad in many barbecue restaurants. German potato salad is vinegar-based, a hot, tart blend of flavors that make a good complement to barbecue. This recipe comes from Paris’s mother, Carlene Permenter, who prepares the dish with barbecue and also with holiday meals.
5 pounds potatoes, washed and peeled
1 large white onion, diced
3 large kosher dill pickles, diced
1 small jar pimientos, drained
1/2 cup white vinegar or pickle
juice, or a combination
Salt and black pepper to taste
Quarter potatoes and boil until soft. Rinse potatoes and mash until Chunky. Add onion, pickles, pimientos, And vinegar. Mix ingredients well. Season with salt and pepper (use pepper Generously). Serve hot or cold.
