Texas Peach Cobbler Recipe

Peach Cobbler

This tasty dessert, contributed by the Texas Department of Agriculture, uses one of the state’s best products: tasty peaches. If you’re looking for peaches straight from the tree, swing through the hill country town of Stonewall in early summer.

1 egg
1 cup sugar
3 tablespoons melted shortening or butter
1/3 cup milk
Grated zest of 1 lemon
1 cup all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
8 fresh peaches, peeled and sliced
1 tablespoon fresh lemon juice
1 teaspoon ground cinnamon or 1/2 teaspoon ground nutmeg
Whipped cream or ice cream

Beat together egg, 1/4 cup sugar, shortening, milk, and lemon zest. Sift flour, baking powder, and salt into egg mixture and beat thoroughly. Half fill a greased 9-by-12-inch baking dish with peaches and sprinkle with lemon juice. Combine remaining sugar with spice and sprinkle over peaches.

Cover with batter and bake at 375 degrees for 30 minutes. Served hot or cold, with whipped cream or ice cream.
